a story of gastronomical proportions
i believe this is a very proper way to start a rainy thursday
(sign outside of incanto, sf. one of the best meals i’ve ever had. chef chris cosentino’s diabolic creation, aptly named ‘leg of beast’, is a whole, well, leg of a beast (baby calf in this case). everything is used, down to the bone marrow (think very rich butter mixed with a bit of olive oil) and tendons. you can even order a whole succulent pig for a bigger party of more than 12 people. but i think the ‘ham in hay’ is something i’d like to sample in the near future.
