duck fat frites, spiral cut potatoes in duck fat. duck confit, duck thigh slowly poached in duck-fat, served over greens in honey cider and grilled bread. a gumbo sampler, 3 gumbos with a side of scallions and red rice. smoked chicken wings, slowly smoked and served with mango, ginger, and habanero barbeque sauce. a duck and blue cheese flatbread, made with fresh daily in-house dough, with tomato, spinach, and a sweet bourbon drizzle. the big jimmy sampler, blessed with st. louis style ribs, beef brisket, pulled pork, and pulled smoked chicken. and an extra order of st. louis style spare ribs with a house-made rub and smoked approximately (and appropriately) for eight long hours. why? hell, that’s why i came here.
